Stuffed Sopaipillas c. 1973

I don’t remember when I came across the basic stuffed sopaipilla recipe, but I do remember the first time I made them, which was in the summer of 1973. I’ve not necessarily perfected this recipe over the years, but I have improved it. The most important thing I’ve learned is to enlist A LOT of helpers. This recipe makes roughly three dozen. (I neglected to include that in the recipe.) Oops.

    1. Interesting that you said that. “…a long time to continue making a recipe”. I had to think about that. It is a long time to continue fiddling with a recipe. Since I don’t make sopaipillas often (as in once every -mumble mumble- decade) haha because they are such a multi-person undertaking, that I learn a new trick each time, and I write down that new discovery to incorporate the next time.

      But they are so worth making.
